What's Up Guys,

This has been a very interesting week. We are trying to do a big push to get the Gardendale location up and running. We have 1.5 inspections left to pass and then we are in there. This has been a long uphill journey, and without the help of my Staff and Jeremy Sauder, and my friends, I know I couldn’t have made this happen, so I want them all, especially Jeremy, to know how much I appreciate all their hard work and support. We are convinced that this Kairos Kafe is going to be a tremendous blessing not only to the folks in Gardendale, but to all of our fans and supporters!

The Greek Tacos have been such a hit that I am running those on special again this week. The soups are the ever-popular Cream of Potato, and one I created last week in honor of my Mee-Maw that we are calling Lima Bean Soup. This one is good, a very hearty country stew that would make her proud. There are a few changes this week as we are trying to streamline the menus and make things as simple as possible for you guys. I have incorporated the Kwick Hitter Menu into the Weekly Specials as a “Pasta” option, a “Kasserole”, and the “Soups”. Same delicious goodness and value in the same Kwick Hitter style, only simpler. I hope that you will try the Peach Kobbler this week, and take advantage of the Coupon. I have received so many accolades about the Kobblers, and this was the original recipe from way back when. This week I was watching the packed house Kairos Kafe and observed that we have a neat blend of people that frequent our establishment... Young, Old, White, Black, Brown, Suits, Ties, Dresses, Sweatpants, Muddy Boots and so much more. It makes me happy to see my dreams come true. I hope to see you this week!

A few months ago I think I may have shared with you guys that I was having a struggle because someone was shrinking my clothes. Okay, well not really, but I have gained too much weight, and after trying all types of stuff nothing seemed to be working for me so I made an appointment with a doctor. To be honest I loathe going to the doctor, even for a physical. But I knew I needed some help. I found them through a mutual friend, and I went once just to see what she was going to tell me. The first thing I noticed about this office was that these ladies were very sincere and genuine, and they treated me like a person. I liked them immediately, and after a series of tests I met with Dr. Cowan. I was a little taken aback when I realized she was a gynecologist. Hahahahahaha. I asked her if I was in the right building and she assured me that I was and that she had many male patients. That kinda freaked me out a bit, but after realizing she did many things I let her explain all my test results to me. She gave me a variety of options, and one that had to do with meal replacements. After I explained to her that I was a Chef and that wouldn’t be ideal for me she came up with a plan for me that involved planned eating, and changing a few habits. It really sounded too simple and at first I didn’t see it working. This lady told me to eat bacon ya’ll! That is every Chef’s dream doctor. Her plan actually involved eating all the time, six times a day, and I couldn’t see how that would work. But ten weeks later here I am and I have lost 18 pounds and I don’t even feel like I’ve been on a diet! I feel so much better too! This past week she asked me if I would do a testimonial for her, and I told her that I would share my success if she would share that part of it was me eating the food that we prepare at Kairos Kafe. Well, it is interesting what a week can bring. A lot has changed with me since I last talked to you guys. Last week I was engaged to be married, and this week I am single. I won’t share any intimate details, but we couldn’t make it work, so I found out that it was time to make a clean break and move on quickly. This had a weird series of emotions associated with it, and the biggest one for me was confusion. Through my relationship with this young lady I have watched Jesus do some incredible things, and the changes that he has brought about have been very meaningful to me. I have always had some huge walls in the area of marriage and relationships, and through this experience those walls came crashing down, but now here we are and it didn’t work out. Did I miss God? Was this a fantasy? Confusing.

I had a long drive this week and I was able to think and pray and listen. It was so weird because I’m trying to think gloom and doom but Jesus was clearly telling me to just let it go and trust Him. But...I really need to analyze it and dissect everything right? He seemed to think not. J That wasn’t part of the plan, so I just said “okay” and it is awesome the peace that I received after that. It made me wonder why I can’t just do that with everything? Just listen to what Jesus says, do that, and trust Him with the results? I really want to learn how to do that.

Relying on my own understanding will weigh me down. It’s a heavy burden to try and figure everything out. When I trust in Jesus absolutely (not leaving all my options open) then He makes my path clear and straight. (Proverbs 3:5-6) It is so neat to be able to Trust Jesus even when the road is Rocky and I don't know what's coming next but I know that it's gonna be good. Because He is Good :)

Kairos Cheesy Chicken Baked Ziti

What's Up Guys,

It has been a pretty hectic time around Kairos, but in a good way. We are on the final stages of the Gardendale opening, and it seems that the anticipation in that community is building in a very neat way. As I meet more and more of the people I know that this location is gonna be incredible on many levels. We are also experiencing an incredible amount of growth at the Birmingham location, and it is very humbling to hear some of the words that people say to me everyday. This has been my dream for many years and it’s neat to see it all coming together!

The Greek Tacos went over incredibly well last week so we are running them on Special again this week. I think we are ready to have fun with this recipe, and I see many others coming out of it as we continue to experiment with this idea. The spicy grilled chicken in the tacos are offset by the creamy coolness of our Greek sauce that really makes these tacos and experience that you will want to take advantage of! I have heard rave reviews this week. The Fish is also filled with delicious goodness and it’s also good for you, grilled Tilapia enclosed in our savory lemon butter sauce with green onions. One of the soups is Kairos Pepper Stew, a delicious concoction that I actually came up with while messing around in the kitchen at home. After my doctor tried to sell me a 30-day supply of vitamins made from peppers for the low-low price of $90 I found out that all peppers were packed with vitamin C and boost your immune system, and also increase your metabolism. I thought that was neat but I know I won’t pay that much for vitamins, so I decided to take advantage of the health benefits the old fashioned way....just by eating them! Imagine that. I created this Pepper stew that has beans, ground beef, incredible seasonings, and five different kinds of peppers (Jalapeno, Sweet, Bell, Poblano, and Anaheim) and I must say its delicious as well as nutritious! The Dessert is a big crowd pleaser too, our Coconut Kobbler that is my version of Coconut Cream Pie but in a Kobbler form! Its flavor is well worth the few extra calories! I hope to see you this week in Kairos!

A little over 16 years ago I was at my lowest point in life... broken, hopeless, lonesome, and in the dark... I was searching for something and I didn’t know what it was... all that changed when Jesus drew me to Himself after I picked up a random book laying on top of a TV in the Montgomery County Jail...

“Come unto me all you who are weary and burdened, and I will give you rest…” These words just penetrated and stabbed me deep in my heart. It was weird. I looked at the book, which turned out to be a ripped up Bible and I thought “Well, I sure am weary…and I sure am burdened…” so I took it back to my mat and looked at it for a little while. When I realized it was a Bible I thought “Oh no…” but for some reason I kept thinking about those words… then I could hear the voice of one of the old people that used to visit sometimes when I was in jail in Florida. He was a sweet old man, and I never could find it in my heart to tell him that I didn’t care about what he was saying, so I would just let him talk, and I would say okay and then forget everything he had to say… this day however I remembered his words… “Young man when you begin to read God’s Word start in the New Testament. It is the story of all that Jesus has done for you and it is what you need to know…”

I opened up the Bible to the Book of Matthew and I began to read… this Bible was different though. I actually understood the words. It was not full of “Thees” and “Thous” and all that other ancient Shakespeare English that I could never comprehend. It was different for me so I continued reading… as I read the Words of Jesus I was amazed to find out that he wasn’t a religious person at all. It actually seemed that this Dude had the same view of Church and all that I had witnessed in my lifetime that concerned Religion, God, and all that other stuff. I felt myself getting excited. I liked what He was saying, and I just soaked it all in…

Later that day as I was sitting there trying to make sense out of all of this my words were “Okay, well, what do I do now?” I was a little confused, and here I was in a place that I never even believed existed and it was as if God was speaking to me very directly, and yet at the same time very gently. This was wacky. I just knew that this was not happening to me. Not me. How could it be? I didn’t believe in any of that stuff. It was about that time I heard the words “All you have to do is give up and let me in…” I remember trying with all my might to resist, and as I sat there I was doggedly determined to hold on to my belief that none of this following Jesus stuff was for real. I thought about it until my head hurt. There was a very real battle going on inside of me and I didn’t really know what to do with all these things that were turning my belief system upside down.

For some reason though all this was bringing me an incredible amount of peace, and it was a peace that I had never known before. At some point later on in the night I found myself saying, “Okay, if you are for real, and if this is for real, then I give up. Come on in…” When I finally got to that place and could say those words and mean them, then what happened next was absolutely incredible. It was as if everything that was inside of me, every fear, every burden, was just lifted. It wasn’t like I saw any fireworks or anything like that. There was no big fanfare, but at that moment something changed on the inside of me, and it was so incredible I could not describe it, but I know when it happened just like I know that my hands are connected to the ends of my arms. There was no denying it.

This week I was reminded again of that experience so long ago and during this very stressful time of my life how Jesus wants me to continue to come to him and give up every little thing that makes me weary and allow him to carry my burdens... Good Stuff... and He is always faithful when I trust Him.

May we all be a people who will daily allow Him to take our “stuff” that keeps us weighed down and hinders us from enjoying the life he has provided for us (John 10:10) God Bless you guys! Thank You for supporting Kairos, and have a wonderful week!

Greek Tacos...Coconut Kobbler...Jesus vs. Religion

What's Up Guys,

This has been an incredible week. The other day I looked at the Calendar and it said January the 12^th and I thought my goodness, this has been the longest twelve days I’ve experienced in a long time. Its all good though it just seems that the momentum has picked up so much that I’m running from one task to the next and back and forth between Gardendale and Birmingham and I’m loving it. We have been through such a time with the Gardendale Location but if I have learned anything over the past 15 years it’s this: When the process is very rough then that usually means the results are gonna be incredible!

The Special this week is a dish that I came up with that I am calling Kairos Greek Tacos. Tacos, you may say, are not Greek. I agree, but I think these fellas best represent my own unique culinary point of view and besides that they taste so good that even the food purists would have to agree. They start out with boneless chicken breast marinated in Greek yogurt, lemon juice, Greek Spices, and of course I threw in a little bit of Cajun spice to get a little bit of the south in there. Then the chicken is grilled to perfection and it creates this smoky crust that is just full of delicious goodness. The we chop that up and add it to a freshly warmed flour tortilla with feta cheese, spinach, red onions and top it my own Greek Sauce, which is my version of the classic tzatziki sauce that you find on gyro’s. The creamy coolness and the cucumbers in the sauce are a perfect companion for the spicy chicken because the sparks fly as these flavors collide and the result is delicious goodness, Kairos Style. I know someone is going to say “That’s all good but why didn’t you use pita bread?” The truth is I try to create things for you guys that I like eating, and I love tortillas but pita bread for me is just okay. So I went with the love. I hope you enjoy the results. The Fish is also a healthy good one, grilled Tilapia with a tasty lemon butter sauce, the Veggie is Grilled Green Tomatoes, and the dessert is the much requested Coconut Kobbler. In addition the Kwick-Hitter menu features Mee-Maw’s Authentic Chicken and Dressing along with Momma’s Cheesy Chicken Baked Ziti and one of my favorite Soups, Kairos Pepper Stew. With all this mouthwatering delicious goodness I can’t wait for the week to start so I can have lunch! Haha. Thank you guys so much for supporting us,a nd I hope I get to see you in Kairos this week. I know that you guys are used to me sharing a personal part of my journey or something that I have been learning at the end of my newsletters. That has grown to be one of the most special times of my week, and I appreciate your comments and encouragement that comes back to me week after week. This week though I want to share someone else’s words with you. I came across this young man after seeing a video of a poem he wrote posted on Facebook. After I listened to I thought “Wow! This kid really gets it!” It was very encouraging to me so I wanted to share his words with you guys.

The name of it is “Why I hate religion but love Jesus” and it is very powerful. I totally got what he was saying, but sadly some folks don’t get it because they get hung up on the word “Religion”. It has always been my belief that Jesus did not come to establish a new religion but to bring us into Relationship with God and to bring us the Truth. I'm not religious. One bit. When I came to Jesus and found out he was real I thought I would never ever enter a Church. I was wrong and have learned that being connected to God means being connected to His people. But that's not religion. That's just me following Jesus. Jesus did not come to make up a new religion. He came to bring us the Truth. And the only thing he wants from us is for us to surrender and follow Him. Not keep doing the same old stuff and adding Him on at the end. He will transform us as we follow Him. That makes it all about Him. But if I am being religious I am making it all about me. And this dude is right. He really gets it. And it's awesome. Why I Hate Religion, But Love Jesus (By Jefferson Bethke)

What if I told you Jesus came to abolish religion

What if I told you voting republican really wasn't his mission

What if I told you republican doesn't automatically mean Christian

And just because you call some people blind

Doesn't automatically give you vision

I mean if religion is so great, why has it started so many wars

Why does it build huge churches, but fails to feed the poor

Tells single moms God doesn't love them if they've ever had a divorce...But in the old testament God actually calls religious people whores...

Religion might preach Grace, but another thing they practice...They tend to ridicule God’s People. They did it to John The Baptist.

They can't fix their problems, and so they just mask it

Not realizing religion is like spraying perfume on a casket

See the problem with religion, is it never gets to the core

It's just behavior modification, like a long list of chores

Like lets dress up the outside make it look nice and neat

But it's funny that's what they used to do to mummies

While the corps rots underneath

Now I ain't judging

I'm just saying quit putting on a fake look, Cause there's a problem

If people only know you're a Christian by your Facebook

I mean in every other aspect of life, you know that logic's unworthy

It's like saying you play for the Lakers just because you bought a jersey

You see this was me too, but no one seemed to be on to me

Acting like a church kid, while addicted to pornography

See on Sunday I'd go to church, but Saturday getting faded

Acting if I was simply created just to have sex and get wasted

See I spent my whole life building this façade of neatness

But now that I know Jesus I boast in my weakness

Because if Grace is water then the church should be an ocean

It's not a museum for good people, it's a hospital for the broken

Which means I don't have to hide my failure, I don't have to hide my sin

Because it doesn't depend on me it depends on him

See because when I was God's enemy and certainly not a fan

He looked down and said I want that Man

Which is why Jesus hated religion, and for it he called them fools

Don't you see so much better than just following some rules

Now let me clarify, I love the church, I love the bible, and yes I believe in sin

But if Jesus came to your church would they actually let him in

See remember he was called a glutton, and a drunkard by religious men, But the Son of God never supports self righteousness not now, not then

Now back to the point, one thing is vital to mention

How Jesus and religion are on opposite spectrums

See one's the work of God, but one's a man made invention

See one is the cure, but the other's the infection

See because religion says do, Jesus says done

Religion says slave, Jesus says Son

Religion puts you in bondage, while Jesus sets you free

Religion makes you blind, but Jesus makes you see

And that's why religion and Jesus are two different clans

Religion is man searching for God, Christianity is God searching for man

Which is why salvation is freely mine, and forgiveness is my own

Not based on my merits but Jesus's obedience alone

Because he took the crown of thorns, and the blood dripped down his face...He took what we all deserved, I guess that's why you call it grace

And while being murdered he yelled

"Father forgive them they know not what they do."

Because when he was dangling on that cross, he was thinking of you

And he absorbed all of your sin, and buried it in the tomb

Which is why I'm kneeling at the cross, saying come on there's room

So for religion, no I hate it, in fact I literally resent it

Because when Jesus said it is finished, I believe he meant it

What's Up Guys,

It has been a great first week of the New Year and it is always incredible to see how much you guys miss us after we were closed for a week. We are moving right along with the Gardendale Kairos Kafe. We can’t wait to get the doors opened on that bad boy so that we can Rock and Roll up there with a great group of people. If you think about us this week please remember us in your prayers. We need the rest of the process to go smoothly, and we don’t anticipate any more hurdles, but the stress of the process is wearing on all of us and we want our opening to be smooth as possible.

The Special this week is Hightower’s “Sassy-Berry” Steaks. We have gotten rave reviews this week so I decided to run it on Special again. The Pimento Cheeseburger though continues to top my list though as the all time greatest burger I have ever eaten. There is just something about the flavor of fresh ground black angus beef grilled to perfection and sprinkled with our “special” seasonings...and then to top off that big juicy burger with the crisp outside layer and the juicy delicious inner layer with our made from scratch pimento cheese...I don’t even know how to explain it... it’s indescribable... but it is definitely the best burger I’ve ever eaten. The Double BBQ Bacon Cheddar Burger is a close second for me, and it is delicious in it’s own way with the same juicy burger slathered in our made from scratch BBQ Sauce, cheddar, bacon, and onion strings... The Kwick Hitter Menu this week features Momma’s Cheesy Chicken Baked Ziti (a taste sensation), Marian’s Meat Baked Ziti (my version of the classic Lasagna) and Mee-Maw’s Chicken and Dressing (which already has gathered a following at The Southside Location) The Dessert is our Strawberry Kobbler, a delicious way to end any meal. I look forward to seeing you in the Kafe this week, and remember that we also offer full Katering Services for your Office Crowd on those day when you can’t get away. The best part about that is we also Deliver.

Last week I went and spent the day with my Granny, Sara Jones, the Author of Granny’s Rolls. Let me preface this by saying I love my Granny with all my heart, and she has been one of those people who was and is very influential in my and now in my business. She’s actually the first one who encouraged me to cook. In every family, and in every relationship we will encounter people who have various issues and things that they deal with and things that we have to deal with. This has been the case with my Grandmother. I love her, but there have been several areas where I have had to draw some boundaries with her over the years.

Doing that with Granny was always hard for me because she has spent so much of her life caring for me and the rest of my family. She has always been there, through thick and thin, no matter what. But now that she has gotten older and we all have our own families, and my Grandfather has passed away, a lot of times she’s just not happy. Several years ago we decided that she could no longer live by herself because she was becoming increasingly unaware of her surroundings and basically just couldn’t take care of herself anymore. This led to a time of her moving in with my Aunt, her youngest daughter, and her family. It was good for her to be there but it was a strain on all of us. It seemed like it was always something and my phone would ring all hours of the day and night. Last year we decided that maybe an assisted living place might be more suitable for her. We kind of eased up on the subject but she didn’t like that idea one bit. She thought we were trying to “put her away”. Well, my Aunt did a lot of research and found an awesome place for us to look at. I encouraged my Granny to just look, and keep her mind open. The trip to that place was rough, but after she walked through the doors and met all the people and saw the set-up she was ready to sign the lease in about 10 minutes. Good Stuff.

For the last 9 months she has lived there and it’s pretty much been one thing after another that she complains about even though she liked it initially. I finally got to the place where I only went over to see her out of obligation because it seemed like there was always something. A few months ago though my Granny had a brush with death. She had to go to the hospital and her heart stopped. She made a recovery but continued to be very ill, and at that point I began to worry about her because she never has went to Church (even though she sent all of us) and when I try to talk to her about Jesus its like I’m talking to a stone wall. Well, I consulted with my Pastor and Mentor about how I could approach the idea of getting her to pray with me. The next time I was over there I said “Granny, I want you to pray with me because I am worried about you...” She said okay and as we were praying I got this strong sense that something had happened to her in a Church Setting. So I explained to her that for most of my life I hated Church and most of the rituals, but when I came face to face with Jesus I found out that he wasn’t like that at all. He was a pretty cool dude, and He is not an idea or a teaching. He is a Person, and he cares about her deeply. She prayed with me and I went home. After that it seemed as if she went from bad to worse, and I have really been concerned and have spent a lot of time praying for her...that was several months ago.

This past week when I went to see her I committed my first Cardinal Sin as a Grandson by being late. (She wants you to spend the whole day when you come) Well, I was bracing for an attitude but when I got there she was just genuinely gald to see me. That was the first odd thing. The next thing I noticed was that she didn’t complain about anything. She also didn’t try to make me feel guilty about anything. As we were preparing to leave I got out her wheelchair that she has been using for the past year when she goes out and about. She told me to put it back in the closet. She said she didn’t want. Okay, I thought, so I went and grabbed her walker. She didn’t want that either. She said she wanted to walk and that she would just hold on to my arm.

Well, the rest of the day was pretty amazing. We went all over the place and there was just something different about her, and several times I was tempted to call some of my family and ask them what was going on with Granny. We had a fantastic day!

When we got back to her place we talked for a long time, and she started getting sleepy so I was preparing to go. She said “J.J. I need to tell you something before you go...” so I said okay. “I just want you to know that I’ve been going to Church and asking Jesus for his Presence. There is a very nice man that comes in and teaches us up in the Chapel, and I have been going, and I am learning a lot, and I just want you to know that it has really made a difference in my life. I thought you would want to know that...”

I was speechless. I told her that was great and I encouraged her to keep on doing that. When I left there that night it was one of the first times I remember leaving her and she did not cry. She always cries. But not this night. She actually floored me with her parting words “Tell Corinna that I am so happy that she is going to be my Granddaughter...” Wow.

I left there kind of stunned and amazed at the same time. My Granny is 88 years old. And she is experiencing Jesus for the first time in her life. How cool is that? It just drove home for me the awesome fact that God is always Faithful, and He can and He will do way above and beyond what we ask Him to do. All we have to do is Trust Him.

What's Up Guys,

It’s the beginning of a new year and I am so thankful for each of you in 2011 and I look forward to an awesome 2012!! Gardendale Kairos Kafe Fans- We will not be making our January 2nd deadline for opening. It will be a few weeks out as the Plumbers finish Plumbing and The Electricians finish wiring, and the new Hood gets finished. We know disappoints you guys, but we are almost there!!! On a positive note we had an awesome time this week interviewing for Team Members at the Gardendale Store, and we have several of you local folks that we are very excited about adding to the Kairos Team. All we like is “finishing up” !!

The Special this week is a collaboration between myself, one of our cooks Roderick Hightower, and our Kitchen Director Brian Oelschlager. We are calling them “Sassy-Berry Steaks” because a while back Roderick had a problem pronouncing the words “Salisbury Steaks”. We all had a good time laughing with one another and in the end he decided that if it wasn’t pronounced “Sassy-Berry” then it should be in our neck of the woods, so we decided to go ahead and make it official. Don’t let the name throw you off though. This is some good eating right here. It’s a handmade Black Angus Chuck Patty grilled to perfection and seasoned with our secret ingredients, smothered in muenster cheese and then covered with one of the tastiest mushroom gravies that I’ve ever tasted. I hope you guys enjoy it! The Fish is the Greek Tilapia, a perfect thing coming from a Country Boy that has Greek Blood flowing through his veins. This dish was actually sampled a few weeks ago by a Pastor traveling through Birmingham that is from Greece. We had a great time talking, I loved his thick accent, and he gave me the two thumbs up on the Greek Style Tilapia, so that was pretty awesome. The Kwick Hitter menu will feature Mee-Maw’s Chicken and dressing for all of you that have been missing it, and the Coupon is for a free dessert, so there are lots going on in the New Year to be excited about at Kairos Kafe.

What I usually do at the start of a New Year is make a bunch of Resolutions that generally last me way into the depths of about the second week of January. (I think its okay sometimes to laugh at yourself, haha) Well, this year as 2011 draws to a close and I have so much to look forward to in 2012, I really don’t think making a bunch of grandiose statements to myself is really fitting to the occasion. For me anyways. I’m not knocking anyone. If that works for you then rock and roll. It just doesn’t seem to suit me that well. So I was thinking “Well, if I’m not going to do the traditional thing, then what am I gonna do?”

Here’s what I came up with. I’m gonna go back over the past year, and reflect on the things that I learned that actually made a big difference in my life. And then I’m going to apply my focus to continuing to do those things and learn more about those things. That really feels good to me versus dreading doing some resolutions that I’ve drummed up for myself.

One thing I want to take over with me into 2012 are some hard lessons I learned about thankfulness, gratitude, and praise. I learned this year that if I would be thankful at all times, regardless of circumstances, then I would not only have peace, but that I would also see miracles happen in my life in ways that continue to make me shake my head in amazement. A life filled with Thanksgiving and Praise is a life filled with miracles.

The second thing I want to take with me is this: It’s not about me. I was created to bring glory to my creator, and when I surrender my life, my mind, my time, my money, and my will to Him, then life takes on a fabulous new dimension. I haven’t mastered this by any means, but I am learning it, and I want to continue to learn it because I have found that when I come at life from this direction, then not only am I filled with joy, but all the deepest desires of my heart are given to me.

Thank you Jesus for teaching me how to have and enjoy the life that you have prepared for me and for those who love you. Thank you guys for supporting Kairos and I believe 2012 is gonna rock for all of us! See you soon!

This year has been one of the most meaningful years of my life. I’m getting married. I Found my Baby Brother. I have reconnected with family that I thought I would never see again. And we are opening an awesome new Kairos Kafe. This Christmas is going to be a quiet one for me as I spend time with friends and family, but more importantly reflecting on what it really means to me. Emmanuel, “God With Us” is what the bible teaches me about the true meaning of Christmas. The coolest thing about this past year is learning, from my own experience, that Jesus is always with me, and I can always have His presence, Peace, and Joy with me, at all times, and through anything that may come my way, positive or negative.

Why is it so hard to give up control? Learned a lot this year. If I give up control then miracles happen. Pretty Simple. Now I'm seeing how fruitless it is to excessively plan. I can't plan out someone else's life. I have to be careful to remember that when I'm trying to help folks. In truth I can't even plan out my own life because I really don't know what tomorrow will bring. It feels so good to let go and enjoy the ride, Love Real Big all the folks in my life and let Jesus handle the rest. I look at parents and their kids. The happiest ones seem to be the ones who allow their kids to determine what God created them to be and do. If we can't even successfully plan out our own lives then how could we do it with our children. God had a perfect plan for all of us. I'm grateful to you Jesus for teaching me to let go, trust you, and enjoy the ride!!!

I will never forget the Christmas of 1996. It was the first one I experienced after I surrendered my heart and my life to Jesus, and I was in a chapel service at Kilby Correctional Facility. There was a kid there who stood up and said he wanted to sing a song for us. He didn’t have any instruments, or any plans, and usually they would have told him to sit down, but this night they just handed him the mic and stood back.

What's Up Guys,

The past few weeks have been truly incredible. This past Sunday my staff and I gathered at Kairos to celebrate 5 years of building relationships around food. It has been an amazing journey, not only for me, but for all of us that have been a part of it. I thank all of you for your support and encouragement, and as a team we all want you to know how much we appreciate you. As we are on the eve of opening our second Kairos in Gardendale the atmosphere is one of anticipation and excitement as we can only imagine how cool this Kairos Kafe addition is gonna be!

Don't forget to take advantage of this week's Coupon (Buy three $10 gift certificates and get one free) They are good for a whole year, so this is a good time to stock up on gifts as well as getting a few for yourself. The Special this week is a collaboration between myself and Brian, one of our cooks. It is Roasted Tomato Soup served with a Pimento Cheese Quesadilla. This lunch right here is off the charts with delicious goodness, warm and hearty, and it really hits the spot on these cold days we are having. The Kwick Hitter Menu also has The Cream of Potato Soup served wih a salad or another side. My favorite combination when it is cold is the Cream of Potato Soup with Grice's Green Beans and Granny's Rolls! That is something that will not only warm you up but it will also tingle your tasebuds with goodness! The Fish is the Greek Style Tilapia, Baked in a light vinaigrette with feta and green onions... this is my favorite Fish that we do, not just because it is good, but because of smell that rises out of the oven when it is cooking. Oh my, I'm not even a big seafood guy buit this one is hard to resist. The Dessert is Peanut Butter Kobbler, and the Kwick Hitter is featuring the Woodard Kasserole (Chicken, Mushroom, Broccoli, & Rice) There is so much to be excited about this week, and I can't wait to see you in Kairos!

I am amazed and a little overwhelmed (in a good way) at all the things that are happening so rapidly in my life. It's almost like I've been on a long journey and I have this beacon of Hope set in front of me and it is always there in the distance leading me on. As I shared with you guys last week, being reconnected to my little brother was not only life changing for me on many levels, but it was also something I have prayed and prayed about for years and now it has happened, in God's perfect timing. Don't ever give up Hope. Keep Hope Alive. God is Faithful!

Many years ago, right before I was released from prison, I spent 3 days writing a Vision for my life after prison. Not really writing what I wanted to see happen, but listening and writing what I believe God wanted to see happen. There was a huge portion that was devoted to what I needed to look for in a wife. Interestingly, most of these qualities came out of the book of Ruth. To be honest, I had almost given up hope of finding the one that I would spend the rest of my life with, and I have learned how to be happy by myself. But one of my deepest yearnings is to have a familly so somehow all didn't connect. I've learned over the last 6 months or so that I had some walls built up around my heart in that area, and I wouldn't let Jesus shine his light in there because some of that stuff hurts and I really didn't want to deal with it. I gave that up a few months ago when I realized what I was doing. This past Saturday I was able to rip one of the pages out of that Vision that I wrote long ago, get down on one knee, and read it to this wonderful girl that Jesus has put in my life. After all these years, I have finally found my Ruth! The cool thing too is that she has found her Boaz.

I've always worried "How will I know?" Its pretty cool the way God works things out though because neither of us have any doubts that she is God's gift to me and I am God's gift to her. Keep Hope Alive. If we don't give up, then everything can be made right so suddenly that it will have you shaking your head in amazement.

What's Up Guys,

It has been an incredible week around here at Kairos Kafe. We are so excited with the momentum that’s happening and so thankful for each of you who support us and tell your friends about us! That is really what causes us to grow. Thanks so much for all your encouragement and positive words to all your friends and family! We have a deep appreciation for each one of you.

The Specials this week are very encouraging. I love this time of year when we can really rock and roll in the kitchen. The Christmas Menu is at the bottom of the newsletter, along with a special offer for gift Certificates (Buy three, get one free) They make great gifts, especially since the Gardendale store will be opening January the 2^nd! The Special this week is the grilled chicken tenderloins with sweet chili sauce. We are getting rave reviews about these bad boys! The fish is grilled salmon with a Honeymustard Glaze, full of delicious goodness that is also very good for you! I have concocted an awesome recipe for Red Bean Soup that has succulent pieces of ham along with some onions and celery and a few other things. This one is great when the weather is cold. It is the Soup along with our ever pleasing Cream of Potato. I tell you one thing you should try if you haven’t yet: The Pimento Cheeseburger. It is a great alternative to getting over the traditional holiday food, and it is the best burger I have ever put in my mouth! The Kwick Hitter menu has some delicious goodness going on as well, the BBQ Chicken Baked Ziti, which is sure to hit the spot along with Granny’s Poppyseed Chicken Kasserole, and Momma’s Cheesy Chicken Baked Ziti. With all this delicious goodness going on its gonna be hard for me to not see you in Kairos this week!

This past few weeks have been some of the most awesome weeks of my life, and I am finally coming to understand a word that I have heard a lot in Church Circles, and read, and even looked up the definition to and thought that I understood it, but in the last few weeks it has become very real to me. That word is Redemption. I have known for some time the forgiveness of sins, and being freed from things that once had me locked up, and I have experienced a relationship with Jesus and others, but these last few months it seems as if everything that was once wrong in my life is suddenly being made right.

Twenty eight years ago there was a divorce in my family. That was pretty rough on all of us, but we managed. The toughest part was that I stayed with my Mom and my baby Brother stayed with his Dad. Twenty nine years ago I told my little brother goodbye after a weekend visit expecting to see him the following weekend only to never see him again except for one brief encounter over twenty years ago. There was a lot that happened that I couldn’t even process at ten years old that led to a lot of my actions later on. All I knew was that it hurt like hell, and more than anything I wanted my little brother, and I knew he wanted me. Over the years I have never forgot about him and always wondered where he was, what he was doing, and missing him. For me, this turned into an impossible situation that would never be made right. But over the past ten years I have always known that Jesus could make it right, but it was hard to think about when.

Over the last few months I know that He has been teaching me how to give up control and trust Him with everything. Its been rough for me, trying to learn to let go, but I decided I was gonna learn it. The results have been incredible. A life of praise and thankfulness becomes a life filled with miracles. I want to do this instead of always trying to be in control and things have been awesome, but I was really not prepared for what happened this week because I was reunited with my little Brother! And it was and is so awesome that I keep shaking my head in amazement. And I know that the only person who could make that happen is Jesus!

Keep Hope Alive. The morning after I met with him I woke up feeling like I'd had a sword removed from my gut that had been there for 29 years. It's weird how something can be there and you know it hurts like hell but it's gone numb and you really don't realize how bad it hurt till its gone. Relief. Thank you Jesus for bringing me and my little brother back together and for taking care of impossible situations.

I am forever changed.

But that ‘s not all. There are several things going on right now that I’ll tell you about later that are happening so fast that it made me say the other morning “God, all my dreams are coming true! What am I gonna do now?”

He is redeeming my life, and restoring everything that was taken away from me, and I am so flooded with gratitude and thankfulness right now that it is overwhelming, but in a good way. I want to encourage all of you to keep hope alive, keep on following Jesus, keep on trusting Him to handle his business in impossible situations because He is Faithful.

I want to Thank each of you for making this year’s Thanksgiving at Kairos Kafe an awesome success! This was the best year yet, and we are so excited about the new place in Gardendale! We will have our Christmas Menu out by the end of the week, and it will be attached to next week’s newsletter, or you can see it before then on our Facebook Page, or on our blog at www.kairoskafe.blogspot.com

I know you guys are all satisfied from the long weekend, but I hope you will be hungry by the time the week starts! Granny’s Poppyseed Chicken Kasserole is gracing the Kwick Hitter Menu along with one of my favorite Kasseroles of all time, The Woodard. This one is slammed full of delicious goodness with tender chicken, sautéed mushrooms, broccoli, and a creamy sauce all tucked into a beautiful bed of perfectly cooked rice. I named this after a family after they asked us to Kater a very large family reunion. They wanted me to do rice, and after persuading them to choose potatoes or pasta, they still wanted rice so I was forced to come up with a recipe… up to this point I had not worked much with rice. At the event, it was so good that was mostly what they talked about! So, I decided to add it to the menu and name it after them since they nudged me in this direction. The Fish is also sure to please! Fresh Salmon grilled with a Buffalo-Honeymustard Glaze… the perfect Umami /uːˈmɑːmi blend of sweet and savory…The Veggie is another one filled with delicious goodness! Green Beans and Shoepeg Corn Sauteed in a creamy sauce…. With so much delicious goodness going on, I hope to see you this week!

Every year around this time I start thinking about what it means to be thankful… and every year I seem to learn some new thing about this or that aspect of thankfulness and gratitude and how it applies to my relationship with Jesus, Other Folks, and even myself… Most of the time I usually forget most of it by January 2^nd…

This year has been pretty incredible. I have learned a lot that I have shared with you guys. But this week, I feel convicted that this is the way I am supposed to live for the rest of my life! Not just during the Holidays, but everyday.

Thank you God for creating me in your image. Thank you for redeeming my life when I made a total wreck of it. Thank you for your presence. Thank you for your peace. Thank you for teaching me how to live and be what you created me to be. Thank you for restoring loved ones to me that were once lost. And thank you for each of these awesome folks that support Kairos!

It has both white and dark meat, no bones, no fuss! Just pop it in the oven for 45 minutes and you are ready to rock and roll!

Spiral Cut Ham with a Cranberry-Orange Glaze - 8-10 pounds - Growing up my Granny always cooked the best Hams for Thanksgiving to go alongside the Turkey. This is my interpretation of that Thanksgiving Memory. It's Spiral Cut, Fall off the bone tender, and glazed with a festive Cranberry Orange Glaze.

Pork Loin Stuffed with Granny's Apple Stuffing- I love pork loin around the Holidays! Especially when they are Stuffed with this Awesome Apple Stuffing inspired by my Grandmother, Sara Jones, the Author of Granny's Famous Rolls!

Mee-Maw's Cornbread Dressing- My Mee-Maw, Gladys Whitaker, made the absolute best Cornbread Dressing in the world! Country Turkey Gravy- Made from Scratch Turkey Stock turns ordinary Gravy into a Masterpiece! It is seasoned with fresh sage, rosemary, and a few other things.

Brian’s Stuffed Jalapenos- I got this recipe from a good friend and Kairos Team Member Brian Oelschlager. They are not too hot, the peppers are seeded and we take out the heat segment before stuffing them with cream cheese, then we wrap them in bacon and bake them. The Perfect Starter to any Thanksgiving!

Green Bean Kasserole- As a kid, this was my favorite Holiday Side. As an adult, I have learned to take this classic to a new level! Cut Green Beans in a creamy mushroom sauce seasoned the Kairos way, with Cheddar, Mozzarella, and Parmesan. Then it's topped with fried onions and baked into mouth-watering deliciousness.

Sweet Potato Kasserole- Classic, Traditional Recipe. I love this recipe that I came up with through much trial and error! It's a little sweet without being overpowering, topped with pecans, maple syrup, and a crunchy crust.

Broccoli, Squash, Hashbrown, or Corn Kasserole - These are all original recipes. We have always gotten high marks on each one! The Broccoli has been devoured by folks that hate broccoli, the Squash has been perfected to an art, but without being mushy, the Hashbrown starts with our made from scratch hashbrowns, cheese, and a creamy sauce (It's perfect for Breakfast OR Lunch!) And the Corn is a unique culinary delight made with White Shoepeg Corn.

Glynis Gail's Broccoli Salad- My Aunt used to always make this for the Holidays. Right before we opened Kairos I was able to get the recipe. I've had different versions, and I believe this one is Stellar. It starts with small bite size broccoli florets, cheddar, bacon, onions (that are big enough to pull out if you don't eat them!) and an awesome sauce!

Bonham's Potato Salad- This is my Momma's Recipe. It starts with red potatoes, smashed with mayo, a little mustard, chopped pickles, awesome seasonings, and a little Cilantro to give it that Kairos Delicious Goodness Kick!

Granny's Grape Salad- I got this recipe right before Thanksgiving last year. We don't serve it often because of the long prepping process, but want to make it available for Thanksgiving. Red and Green Grapes are covered in a creamy poppyseed sauce, and caramelized with brown sugar. I always get rave reviews on this one!

Last week I shared with you guys how awesome my life has been since I was challenged by Jesus to be thankful even when my circumstances were not good… This was not easy to do, but once I decided to do it anyways my life has been incredible. It’s as if I can feel the presence of God all the time. It has been amazing… however…When things are going good in my life I have the tendency to think “Okay, when is this gonna be over…” because I think, well, life is rough so at some point I have to get back to experiencing real life again. But, then I feel guilty for thinking that way, AND it usually robs me of whatever Joy I have in my life at the present time, so I have been trying to learn how to overcome that thinking pattern. But to be honest it’s tough. I’ve always thought that way.

There was a point this week about midweek when, sure enough, I started to get overwhelmed with all the pressures and worries of everything I have going on at this present time, and I began to get discouraged. I was determined though, to find out what it is about the way I think that keeps me locked in that negative pattern, so I asked Jesus to help me. What he showed me next was pretty cool. I found out that when I get really wrought up on the inside about something then it is almost always something way out there in the future, and it causes me to lose today. He told me I have to learn to trust Him each day for what’s going on that day. Sounds pretty simple. And applying it has been awesome!

When I worry about something that may or may not happen in the future, then its like I am looking out there and thinking that Jesus won’t be with me… and yet, when I get to the time of something I have dreaded or was afraid of, He is always there, He always protects me, He always provides…but I usually don’t know ahead of time how He is gonna do it, but He always does, so what is there to fear or worry about! He’s only gonna give me what I need for today anyways! That was awesome lesson that helped me to change the way I think!

Today, may we be a people who are thankful for right now, because that’s where God always is (Right Now) and in the words of Jeremy Camp, Everywhere I go I know He is not far away!

We have had an AWESOME week around here! I have so many to many things to share I'm afraid there won't be enough room! I have the Thanksgiving "take home" Menu ready, and I think its the best one yet! I think this is our most stellar menu to date, and I am so excited for the opportunity to have a part in your Thanksgiving tables! Pickups will be available Wednesday November 23rd at both the Birmingham location and the Gardendale Location (Birmingham Pickup- Wed. 11/23 8:00 a.m.-7:00 p.m. 515 University Blvd. - GARDENDALE Pickup- Wed. 11/23 3:00 p.m. Till 8:00 p.m. 961 Main Street)

I have an update for all of our North of Town Fans:Due to unexpected remodeling Kairos Kafe Gardendale will not be opening its doors until January 2nd 2012. We are disappointed because we planned on being opened by Thanksgiving Week. The Good News is that we will have a practically brand new kitchen that will be a blessing to you guys and to us for many years to come. The Better Good News is that in light of our plans being delayed, Mayor Othell Phillips and The Gardendale City Leaders are allowing us to offer pickups for your Thanksgiving pleasure on Wednesday November 23rd from 3:00 p.m. until 8:00 p.m. !!! We think this will be a way to help ease the disappointments. I hope you guys agree! The Menu will be posted here, on our Facebook Page, and on our Blog Page. Tell a friend about it, and if you own a business, or want menus for your Churches, or any groups, just let me know and we will drop them off to you! God Bless You, and I trust that you will understand the lengths we are achieving to remodel an outdated restaurant!

The Specials this week pale in comparison to the Thanksgiving Menu, but they are filled with warm delicious Kairos Goodness! The New Chicken Tenderloins with Sweet Chili Sauce continue to wow you guys... The Fish is a Holiday Favorite that I do every year at Kairos, fresh grilled atlantic Salmon with a Cranberry-Orange Glaze. If you've never experienced this one then you don't know what you are missing! The Veggie is Sweet Potato Kasserole, another warm and cozy favorite, the Pumpkin Soup and Cream of Potato Soups have went over so well that I decided to add them to the Thanksgiving Menu! Try the Pumpkin this week if you haven't already! The Dessert is a spin on the Peanut Butter Kobbler that has received accolades from you guys. I love it but I always personally feel like it's missing something, so we added Chocolate Chips to it, and we are calling it the "Jeff Dennis Peanut Butter "Cup" Kobbler because it tastes like a Reese's Cup in Kobbler form. I'm naming it after my friend Jeff Dennis because he was the inspiration for this sweet culinary delight! The Kwickhitter menu will include Mee-Maw's Chicken & Dressing (We can't seem to make enough!) and Marian's Meat Baked Ziti (our version of the classic Lasagna) With all this delicious goodness happening at Kairos, it's gonna be hard for you to resist seeing me this week!

This has been one of the most amazing weeks of my life. It started off rough. As I shared last week, I had some major obstacles drop on me like a ton of bricks regarding the Gardendale Store. We were finally on the fast track to being open by Thanksgiving, and all of our ducks were in a row, the Electricians were wiring, the Plumber was plumbing, We were painting, purchasing equipment and the momentum was rolling... then I had a quick meeting with the guys putting in our new fire system...it should have been a 10 minute meeting, but when he stepped in the kitchen his first words were "James you can't use that Hood..." My heart sank. I argued. I pleaded. I showed him documents from the Health Department. His reply "I don't care what the Health Department said! We are Liable if we install the Fire System, and there is no one that will install it with that hood. It's Outdated and unsafe."

Understand that his news meant I would have to come up with an additional 25,000 and his news also killed our deadline. He said there was no way he could build the hood, get the drawings approved, and have it installed by Thanksgiving. This really made me want to throw up. When I got in my truck, immediately I thought of a scripture that Jesus keeps bringing my way...

Give thanks in everything,

for this is God's will for you in Christ Jesus. 1 Thessalonians 5:18 (HCSB)

Now, I can understand being Thankful for things that I love... Life, Freedom, Family, you know, the Good Stuff... but lately this one comes to me around every corner... Be Thankful no matter what... The Amplified Translation of this passage goes on to say "no matter what the circumstances may be, be thankful and give thanks..." Now, I don't no about you guys, but this just don't make any sense to me! It goes against everything I understand. It reminds me of being in High School trying to understand Algebra... I just never could grasp it ... so I left it alone.

I read this and want to skip over it, because I don't understand it. I have even heard Preacher's say that it doesn't mean that (not my Pastor, but other ones) and it would really be easier just to ignore it but over the past few months it seems to be what God wants me to learn. So here I am, sitting in my truck with devastating news, a hopeless situation, and the Lord clearly speaks to me... "James, go ahead and Thank Me for this..."

So with everything screaming in me that I don't understand, I give it up, Thank God anyways, Tell him I Trust Him and His will for my life and business, and try to carry on. That was Thursday. I struggled over the next few days trying to remain thankful and have faith that we were gonna be okay. Then on Sunday I had to lead share time at Church... I had a wonderful topic picked out... then Jesus says "No. You need to share this..." I didn't want to. What if it didn't work out?? I would look silly. I did it anyways. By Tuesday I had not only raised all the money, but I also formed a plan to be able to offer Thanksgiving Pickups in Gardendale, and there were so many miraculous things that happened in those two days that it brings me to my knees in tears.

In two days I have watched every prayer I have prayed for years get answered. Impossible Prayers. Unsolvable Situations. One that has been going on for 29 years! All handled, made right, in two days! It has been absolutley mind boggling... I told my friends "I am absolutley overwhelmed... I feel like I am just flooded, but with good things" So I started this week overwhelmed with problems and ended it overwhelmed with blessings. Yesterday morning as I thought about it I said "Jesus, you have made all my dreams come true! What do I do now??"

"Dream some new Dreams!" The sweetest part in all this were his words to me that said: "James, from this point forward you will trust me with everything..."

I don't say all this to brag. I promise. I am just amazed. And it all started with that one verse that makes no sense...

May we all embrace the fact that it is God's Will for us to be Thankful in all situations, no matter what the circumstances, and choose to do it even when it don't make sense. God Bless You Guys! Without you Kairos would not be a Success! Have a wonderful week!

What’s up Kairos Fans,

Momentum has really picked up around Kairos. We are so excited that we are about to get into the Thanksgiving Season, which is my favorite time of year because it means I get to come up with new and exciting dishes to prepare for my family, friends, and all of you guys! We will have our Thanksgiving Menu out by next week! I also taped a few spots on Fox 6 this week that featured two recipes, Pumpkin Soup and J.J.’s Awesome Cranberry Sauce. You can check out our Facebook Page or the Kairos Blog and it will link you the Video and Recipe at Fox 6.

This week I have decided to do some of the same things on the Specials. Mee-Maw’s Chicken and Dressing with that awesome cranberry sauce has been selling like crazy! We seem to be unable to make enough of it to last through a Lunch Shift! Today a lady sent word to me… “Tell James that he put his foot in that Chicken and Dressing!” Fortunately I know now that is meant as a compliment. When we first opened here I had a customer who told me that I put my foot in her food…and I thought something was terribly wrong! She explained though that it was meant as a good thing. The Chicken Tenderloins with the new Sweet Chili Sauce continues to make many of you happy, so we will probably put that on the menu soon. The Soup is the Fall-Favorite, Pumpkin Soup, or the other choice is the ever warm and popular Cream of Potato. The Broccoli Kasserole, which is the Veggie, is also hearty and comforting. Our latest Kobbler, the Key Lime Kobbler, is the dessert and it is filled with unique delicious goodness! There is just so much to try this week. I can’t wait to see you in Kairos Kafe.

Today has been an interesting day. My days, nights, and everything in between have been consumed the last few months with the opening of our new place up in Gardendale. We have faced so many obstacles that seemed insurmountable and yet we’ve overcome them… it has been a rough process, and in the last month or so it has looked as if we were on a clear path to getting it done in record time. This morning though, I got some very discouraging news that we are going to have to redo something, from scratch, that we hadn’t planned on doing… and don’t have time to do… and don’t have the funds in our budget to do… and yet, here it is. I have to do it or we won’t be able to pass the fire code and open…

My first thoughts were anger, then self-pity, then oh-no, then “Why me, Jesus?” Some of this stuff just makes me want to scream. But today, as I drove away from my bad news my mind was flooded with all the obstacles that have jumped up on me over the past fifteen years… Amazingly, I could not recall even one time that God allowed obstacles to swallow me up or stop me…or even to really harm me. So, I decided to do something that I have been reading about in the Bible. Several passages that say “Be Grateful, and give Thanks, regardless of the circumstances…”

Its real easy to be Thankful and Grateful when you don’t have obstacles… its much harder when you have stuff going on that makes you anything but grateful. But somehow, this morning, I knew that was what Jesus was saying to me … “James, Thank Me, and Trust Me, even though everything is not going according to plan…”

This brought to mind another thing… I may not have saw this thing coming, but God knew that it was going to happen all along… so all I have to do is be grateful, trust His plan, and keep on moving forward! Easier said than done, but in the end it is awesome to be in that place! We will have some refiguring to do, and we will have to come up with some creative stuff, but we will get it done. And I believe that since this thing in Gardendale has become so hard, that it is gonna be an absolutely mind-blowing wonderful thing once we open!

Chicken and Dressing…Key Lime Kobbler…The Creator…

What’s up Kairos Fans,

It has been a doozy of a week! It amazes me to be able to stand back and watch Kairos keep growing and growing! We have a tentative date for our Gardendale location, but we need to keep it quiet because we really need to open quietly in order to work out all the kinks… and then have a huge Grand Opening later on. I know that is going to be a tough task, but with all the interest in Gardendale we want to be able to give all of you the best service possible. Thank you for understanding our need to do it that way. It’s not to be sneaky or to keep you guys unaware. Even if we only have one day to do dry run, it will make the whole process smoother in the long run.

I don’t know if it’s just the weather cooling off or the fact that we are heading into November, but the demand for Mee-Maw’s Chicken & Dressing has been incredible over the past week… It’s almost like we can’t make enough of it! That will be on the Kwick Hitter Menu this week, along with Momma’s Cheesy Chicken Baked Ziti, and a newer one I’ve never tried in the Kafe called Tony’s Tomato Basil Baked Ziti. This one doesn’t have any meat in it so if you are in the mood for a Vegetarian dish then this one does not lack in flavor or delicious goodness. The Veggie is our Broccoli Kasserole that continues to receive accolades from all of you, and the weather is finally cooling off enough for me to make a Fall/Winter favorite around here, Kairos Pumpkin Soup. Also new on the dessert front this week is a Key Lime Kobbler recipe that I have been developing that I know you guys are gonna love!

I had an interesting conversation this morning during my quiet time. I woke up a little earlier than usual and it was still dark outside… it was really beautiful, the sky was clear and I could see the stars in the sky. As I was looking I felt the still small voice ask me a question (I’ve learned to listen closely when I get asked a question because it usually means I’m about to learn something neat)

“Do you think I created those stars?”

“Yes. Absolutely.” (my reply)

“Do you think it was Magic… or do you think I CREATED those stars?”

For the rest of the morning my mind and heart was flooded, in a good way, about what that means… If I were to think about what I believe, and the way I have been taught it, I would probably say that God just magically creates stuff, kinda like the blonde lady on the old show “I Dream of Jeannie”… Magic Stuff.

This morning however, it struck me how the Bible says that God is The Creator, not The Magician. He Created the Heavens and The Earth, and He Created me in His Image… Kingdom Stuff.

If you create something it implies that it is a process and you have to oversee every small detail… On the other hand, if you’re a magician then you just beam stuff down… Now, don’t get me wrong, I know firsthand that God does do miracles, but more often, in my life, it seems that when Jesus wants me to have something or He wants to do something through me then it usually happens in a step-by-step process… and the process usually produces something “in” me that was lacking before the process started… things like trust, confidence, patience, kindness, love, etc.

It makes me marvel at the Wisdom of The Creator… if He just gave me everything I wanted … Magically … then I would probably never change and I would probably not be grateful for all the good gifts that He does give me…

Ha Ha… this may not mean much to you, but at the time I feel like God is challenging me in the area of just thinking that He is a Magician… He is teaching me that following Him and living in Him and Him living in Me means that there are things that He is responsible for… things that are His job that I need to leave alone… on the other hand there are also things that I am responsible for that are MY job that He wants me to handle.
